In 2017, he opened his LeRoy and Lewis barbecue trailer with partners Lindsey LeRoy, and Sawyer and Nathan Lewis, garnering much praise including a No. 5 ranking in the 2021 edition of Texas Monthly\u2019s regarded Top 50 BBQ Joints list. Known for his unique takes on Texas barbecue, LeRoy innovates in more ways than one, building the truck\u2019s offset pit and butchering whole animals specifically for smoking.
