Akin is currently the chef-partner of Le Cavalier at the Green Room, a reimagined French brasserie at the iconic HOTEL DU PONT in Wilmington, DE opened in September 2020. Akin also serves as chef-partner of Bastia, a laid-back restaurant and leisurely all-day caf\u00e9 drawing inspiration from the Mediterranean and coastal cuisine of neighboring islands Corsica and Sardinia at the Hotel Anna &amp; Bel in Philadelphia\u2019s Fishtown neighborhood, which opened in August 2024. Named a \u201cMust-Visit New Restaurant\u201d by <em>\u795d\u60a8\u597d\u80c3\u53e3<\/em> prior to opening, Bastia has since earned accolades including, placement on <em>\u300a\u6642\u5c1a\u5148\u751f\u300b<\/em>\u2019s list of \u201cBest New Restaurants in America\u201d for 2024, awarded <em>Eater Philly<\/em>\u2019s \u201cBest New Restaurant,\u201d and named the #1 restaurant in Philly by <em>Philadelphia Magazine<\/em>, which hailed it as a destination worth traveling to from \u201canywhere in America.\u201d The restaurant was also spotlighted in <em>The Wall Street Journal<\/em> for its pivotal role in redefining hotel dining.<\/p>\n<p>Akin was the chef-owner of now closed Res Ipsa in Philadelphia, which was named one of <em>\u795d\u60a8\u597d\u80c3\u53e3<\/em>\u2019s \u201cBest New Restaurants in America,\u201d and two locations of Stock, all gracefully shuttered during the pandemic. Previously in his career, Akin worked in James Beard Foundation and Michelin-recognized kitchens including Zahav (Philadelphia) and Komi (Washington, D.C.)
