For\u00a0Carlos, cooking is a form of memory, a way to preserve the past while sharing it with the next generation.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">His culinary journey began in the cevicher\u00edas of Lima before he immigrated to the United States at sixteen. As a young man in a new country,\u00a0Carlos\u00a0turned to cooking as both creative expression and a way to stay connected to home. Rooted in Peruvian tradition yet driven by innovation, he crafts dishes that reflect where he comes from and where he\u2019s going.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Carlos\u2019s talent and leadership have earned him national acclaim, including a spot on Eater\u2019s \u201c30 Under 30\u201d and four Michelin Bib Gourmand awards for his work at China Chilcano by Jos\u00e9 Andr\u00e9s.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In 2022, he partnered with Chad Spangler and Glendon Hartley to open Causa\/Amazonia \u2014 a dual-concept restaurant inspired by Peru\u2019s diverse ecosystems and culinary heritage. The restaurant has since received a MICHELIN star (2023 &amp; 2024), the MICHELIN Young Chef Award (2024), two RAMMY Awards for \u201cBest New Restaurant\u201d (2023) and \u201cBest Fine Dining Restaurant\u201d (2024), and national recognition as a James Beard Award finalist for Best New Restaurant (2023) and Best Chef: Mid-Atlantic (2025).<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Now a father,\u00a0Carlos\u00a0is driven by the desire to build the American dream for his children \u2014 sharing the flavors of his upbringing while forging new traditions.
