While في أوتشي he met fellow chef دانيال لي  و together they would forge a new, refined vision for sushi that would lead to multiple  concepts و international acclaim. Under their Duckstache Hospitality umbrella, ال  partners have opened هيوستن concepts including Handies Douzo, Kokoro Handroll حاجِز, Kokoro Sushi & Yakitori, Doko, حاجِز Doko, أيكو و Himari all specializing في sushi و handrolls. ال company’s success has led to Kokoro branches في Dubai with new UAE outposts on ال way. باتريك remains committed to making memories for guests through exceptional service و uncompromising sushi craftsmanship

Armed with classic training من ال prestigious Le Cordon Bleu في Los Angeles, دانيال لي forged a culinary career first sparked في age 16. After working في kitchens في كاليفورنيا, فرجينيا و واشنطن, دي سي, he landed a job at أوتشي في هيوستن, a post that would change his life. He spent three years في ال renowned modern Japanese restaurant working for James Beard Awardwinning chef Tyson Cole. There, he met chef باتريك فام, و together they set out on their own journey perfecting ال art ل highend handrolls و sushi.
