The Throwdown

Born in El Salvador, Joaquin Rodas grew up in Los Angeles and made New Orleans his home in 1995.  Joaquin worked at Taqueria Corona for nine years before deciding to take on a venture of his own. The Upstairs at Mimi’s, which serves tapas would prove to be a great success and would begin a love affair of pairing great wines with delicious rustic food with Mediterranean influences.  Following his post Katrina move to Chicago Joaquin returned to New Orleans in 2009.   Chef Joaquin’s passion was ignited by his work in Chicago and being inspired by some great New Orleans chefs, he made his way to Bacchanal Fine Wine & Spirits.  Bacchanal would provide the perfect culinary canvas for a wine centric menu.   Each of Chef Joaquin’s dishes are created with the old world wines of Bacchanal in mind.  Each recipe showcases Chef’s love of food and his seasonal approach embrace the old adage “what grows together goes together.”
